Start date: 10/26/2008


10/26/2008 - Crushed and de-stemmed 75 lbs of merlot grapes. Added 4 tsp pectic enzyme and 1/4 tsp potassium metabisulfite. 24 hour rest.
10/27/2008 - Added 3 1/2 tsp DAP yeast nutrient and 1 pkt WYEAST Chateau Red wine yeast.
     - 1st Acid Reading: 0.9%
     - 1st Sugar Reading: 1.092 (12.5% potential alcohol or 23 degrees balling)
10/30/2008 - First SO2 Reading: 0-5ppm. Added Malo-lactic culture.
11/09/2008 - Pressed the wine into a 6 gal. carboy for secondary fermentation.
03/18/2009 - 1st racking.
09/21/2009 - 2nd racking. Added oak chips. Front label is ready!
